Ingredients
- 2 C. shredded Mexican cheese
- 2 C. cooked diced chicken (already cooked rotisserie makes this quick & easy)
- 20 oz. frozen hash browns (shredded or diced)
- 1 C. sour cream
- 8 eggs
- 1 (4 ounce) can green chiles
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 packet taco seasoning (optional)
- 4 pieces crumbled cooked bacon (optional)
Directions

Preheat oven to 375 degrees, grease a 9x9 casserole with butter

Layer hashbrowns, chicken, and 1 1/4 C. cheese to the pan (add crumbled bacon and taco seasoning here if you want)

Whisk eggs and sour cream together in a large bowl; then mix in salt, pepper and chiles. Pour mixture over top of other layers, then sprinkle on remaining cheese

Cover with foil and bake 35 minutes, then uncover and bake another 15 minutes. Remove. Cool. Serve. **Salsa goes great with this
